Carignane is the wine industry's secret weapon. Spanish in origin (another name for it is "Uvi di Spagna"), it's made its biggest mark in southern France, where it plays a major role in bulk-wine production. In California, where it's traditionally used to amplify Zinfandel, it's been overshadowed by its more popular partner. But when it's made carefully from old, low-yielding vines (the only kind of Carignane left in California), it reveals a smoked-cherry-vanilla character whose firm acidity is excellent with food. In the end, we don't mind if Carignane is a well-kept secret; it means there's more for us.
